Baingan Bharta — homemade Indian dish from The Curry Creations, New Jersey

What is Baingan Bharta?

Baingan bharta starts with eggplant roasted until its skin chars and the flesh turns soft and smoky. The eggplant is then mashed and cooked with onions, tomatoes and spices, so the smokiness runs all through the dish.

It's a beloved Punjabi classic, rustic and hearty, and one of the most-ordered vegetable dishes at The Curry Creations.

Cooked in 100% olive oil

Never vegetable oil or palm oil. No preservatives, no artificial colours.

Best served with

Warm roti is the classic pairing, and roti is available as a side with your weekly order.

Allergens

No added nuts or sesame. Our kitchen also handles nuts, sesame and dairy, so please message us about any allergy before ordering.

Keeps up to 5 days in the fridge or up to 5 weeks frozen on the day of delivery. Containers are not microwave-safe — heat in a pan or on a plate.

How we cook our Baingan Bharta

We fire-roast the eggplant for its smoky flavour, then mash it and cook it with onions, tomatoes and spices.

Like every dish from our kitchen, it's cooked in 100% olive oil with no preservatives, packed hot into a 16 oz biodegradable container, and delivered the same weekend it's cooked.

Baingan Bharta — FAQs

The eggplant is roasted over a flame until the skin chars. That smoky flavour goes into the flesh and carries through the finished dish.
Is baingan bharta vegan? +
Yes. Ours is vegan: roasted eggplant, onions, tomatoes and spices cooked in olive oil, with no butter, cream or other dairy.
How long does it keep, and how do I reheat it? +
It keeps up to 5 days in the fridge, or up to 5 weeks if you freeze it on the day of delivery. Our containers aren't microwave-safe, so heat it in a pan or on a plate until piping hot.
