Bhagara Baingan — homemade Indian dish from The Curry Creations, New Jersey

What is Bhagara Baingan?

Bhagara baingan is a signature dish of Hyderabad: baby eggplants cooked in a rich gravy of roasted peanuts, sesame and coconut, sharpened with tamarind. The result is nutty, tangy and gently spiced, with a balance of sweet, sour and savoury that's quite different from North Indian curries.

It's traditionally served at weddings and festive meals alongside biryani, and it's one of the most-ordered vegetable dishes at The Curry Creations.

Cooked in 100% olive oil

Never vegetable oil or palm oil. No preservatives, no artificial colours.

Best served with

Steamed basmati rice is the classic pairing, and plain rice is available as a side. In Hyderabad it's traditionally served with biryani.

Allergens

May contain nuts and sesame. Our kitchen also handles nuts, sesame and dairy, so please message us about any allergy before ordering.

Storage & heating

Keeps up to 5 days in the fridge or up to 5 weeks frozen on the day of delivery. Containers are not microwave-safe — heat in a pan or on a plate.

How we cook our Bhagara Baingan

We cook baby eggplants in a gravy built from peanuts, sesame and coconut with tamarind and spices.
