Tingling Tindora — homemade Indian dish from The Curry Creations, New Jersey

What is Tingling Tindora?

Tindora (also called tendli or kundru) is ivy gourd, a small green vegetable that looks like a tiny cucumber. In this dish it's stir-fried with mustard seeds, curry leaves and aromatic spices into a light, everyday sabzi with a gentle heat.

It's a favourite in many Indian homes but rarely found on restaurant menus, and it's one of the most-ordered vegetable dishes at The Curry Creations.

Never vegetable oil or palm oil. No preservatives, no artificial colours.

Warm roti or steamed basmati rice, both available as sides, with a dal alongside.
